Southwestern Holiday Stuffed Peppers Recipe:

Ingredients:

6 large bell peppers (any color)
1 lb ground turkey
1 cup cooked quinoa
1 cup black beans, drained and rinsed
1 cup corn kernels
1 cup diced tomatoes
1 cup shredded cheddar cheese
1 tsp chili powder
1 tsp cumin
1/2 tsp garlic powder
Salt and pepper to taste
Fresh cilantro for garnish

Instructions:

Preheat your oven to 375°F (190°C).
Cut the tops off the bell peppers, remove seeds, and blanch in boiling water for 3-4 minutes. Drain and set aside.
In a skillet, cook ground turkey until browned. Drain excess fat.
In a large bowl, mix cooked turkey, quinoa, black beans, corn, tomatoes, 1/2 cup of shredded cheese, chili powder, cumin, garlic powder, salt, and pepper.
